Daniel Fast: Day 3

How are you doing? If you're off to a slow start just keep going. We're getting better as the days go on. Remember, this is less about what you eat and more about strengthening and maintaining your relationship with God. Eating the detox foods just helps clear your system and make it easier to receive clarity.

Moment Of Truth

I can be a bit strict on myself during the Daniel Fast because my diet is already 60% plant-based. So not only do I take out the animal products, dairy, sugars, caffeine and alcohol, I also stop eating for the night - around 7pm and limit breads and pastas. That's mainly why so many vegans are overweight. They remove the meat, but bulk up on carbs! I don't want you to do that. Stick to the fruits and vegetables. Needless to say, I became emotional after the first few days of not eating junk. 

I found myself praying extra hard. You know why? Because as someone who has experience in nutrition I know that craving sugar, salts, cookies, or chips is not usually a good thing and often times signals emotional imbalance. So I've been praying for a sound mind, body, and spirit. I've been praying for help to release the emotions that no longer serve me. 

Try this meditation. 

I've been struggling with my late night snacking so I bought some trail mix for those moments at night when I can't take it. It only lasts for the first week. So if you struggle with late night snacking and you're switching over to - "No eating after 7pm" - grab some dried fruit and trail mix. If seven is too early for you then try "No Food After 8pm". Just keep going. This type of fasting also helps boost weight loss results. 

These are all tips you can use even when you're not fasting. Today is the second day of my vegetable soup. It's so good! If you made a lot, make sure you freeze it for one of the following weeks.

Vegan Stir Fry Recipe

Ingredients

  • Olive Oil
  • Vegetables: red bell pepper, yellow bell peppers, sugar snap peas, carrots, mushrooms, broccoli, baby corn, water chestnuts.
  • Sauce: soy sauce, garlic cloves (minced), brown sugar, sesame oil, chicken broth, cornstarch
  • Garnish: green onions and sesame seeds

The first step is to cook up your veggies. I used a combination of red and yellow peppers, snow peas, broccoli, carrots and mushrooms. I also added some baby corn and water chestnuts into the mix for variety. While the veggies are cooking, I make a simple garlic and ginger sauce. The sauce gets poured over the veggies then is simmered until thickened. You can enjoy your veggie stir fry as-is, over brown rice or lo mein. Make it your own. 

  • Sauté: In a wok or large skillet add 1 Tablespoon olive oil over medium high heat. Add bell pepper, peas, carrots, mushrooms, broccoli, baby corn, and water chestnuts. Sauté 2-3 minutes until veggies are almost tender.

I like to stir fry the vegetables that take a little longer to cook first. Like the carrots, mushrooms and baby corn. Then I add in the remainder ingredients. Broccoli, snow peas and the bell peppers do not take as long to cook.

  • Whisk: In a small bowl, whisk together soy sauce, garlic, brown sugar, sesame oil, chicken broth, and cornstarch.
  • Mix: Pour over veggies and cook until the sauce has thickened.
  • Garnish: add chopped green onions and sesame seeds if desired.
  • Nuts: almonds and cashews are great to stir in as well.
  • Spicy: make it spicy by adding some heat with sriracha or crushed red pepper flakes.

Tips 

  • To help cook the vegetables at the same rate, make sure to cut into similar and smaller sized pieces.
  • Store your vegetable stir fry in the refrigerator for 5 days. You can even meal prep!
  • Baby corn and water chestnuts are found in cans down the ethnic food aisles.
  • Make ahead the sauce for this vegetable stir fry. It will last in the refrigeratior for 3 days. You can freeze this for later use if needed.

This is another meal that you can eat for a few days. I usually have a dish for dinner two days in a row or for dinner one night then lunch the next day. I am getting a lot better at freezing the foods to have for the following week.
